The fruit for this wine was harvested from two unique, certified organic vineyard sites on the 11th and 21st April 2016, at optimum ripeness. The Riesling was gently pressed and the juice allowed to settle for 36 hours. Clear bright juice was racked for a cool fermentation in stainless steel, with specialist yeast to promote expressive aromas and rich mouth feel. The ferment was stopped to retain a small amount of natural sugar.
No animal-based finings were used to finish the wine, making it vegetarian and vegan-friendly.

The nose is expressive of white stone fruit and apple, with a floral bouquet and subtle garden herbs. The palate is mouth filling and juicy, soft and fleshy, with vibrant white fruit, baked apple and citrus. This is a fresh and vibrant wine of medium to full weight with an off dry, lingering finish.
This approachable wine drinks very well on its own, and would be excellent partner for many fish or chicken dishes and lightly spiced Asian cuisine.
