Winemaking notes
An innovative take on “pink” – this wine blends the floral/citrus notes of a classic aromatic varietal with the cherry and red berry flavours of a favourite red grape.
Our winemaker called on the European tradition of blending both red and white wines to create this aromatic, fruity Blush wine.
In the vineyard, dedicated blocks of both Riesling and Merlot were leaf plucked early in the season to expose the grapes to the sun and promote ripe fruit flavours.
Harvest was on the 21st April 2016 with the Riesling being destemed and gently pressed and allowed to settle for 36 hours. Clear bright juice was racked for fermentation in stainless steel, with specialist yeast designed to promote expressive aromas and rich mouth feel.
Judicious blending with a small portion of Merlot provides summer red fruit flavours, bright cherry-like colour and subtle tannin focus.
The wine was bottled on 30th August 2016. No animal-based finings were used to finish the wine.
