This was always a wine that would reward  careful cellaring!  It has now been 5 1/2 years in bottle.

Winemaking Notes

The fruit for this wine was sourced  from our home vineyard in Brightwater – 93% handpicked  premium Mendoza clone with the addition of 7% Clone 15.  

The grapes were whole bunch pressed, the juice allowed to settle naturally before being racked to barrels for fermentation. These barrels were all French oak, with 33% being new. A selection of different yeast strains were used to ferment the juice to dryness.

After barrel fermentation was complete, the wine was aged on lees in barrel for 14 months, with regular lees stirring during the first few months. Around 50% of the wine was allowed to follow malolactic fermentation during the warmer months of 2011. The blended wine was filtered and bottled in September 2012.

Tasting notes

This Chardonnay is flavoursome with strong, nutty yeast lees and gingernut characters dominating white peach and grapefruit flavours. It is richly-textured with good weight and mouthfeel.
